Prepare the Onion Tanglers
Slice the onion into thin rings and soak them in buttermilk for about 30 minutes. In a separate bowl, mix flour, salt, and pepper. After soaking, dredge the onion rings in the flour mixture.

Cook the Tenderloin Bites
Cut the beef tenderloin into bite-sized pieces. Season with salt and pepper. In a hot skillet, sear the beef bites for about 2-3 minutes on each side until they reach desired doneness.

Place a slice of provolone cheese on top of the cooked tenderloin bites and cover the skillet for a minute to melt the cheese.

Toast the brioche buns lightly. Place the tenderloin bites with melted cheese on the bottom half of each bun, top with onion tanglers, and cover with the top half of the bun.
