Prepare the Dough

In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy. Stir in flour and salt until a dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.

Preheat Oven and Prepare Baking Soda Solution

Preheat your oven to 450°F (232°C). In a large pot, bring 10 cups of water and baking soda to a gentle boil.

Shape the Pretzel Bites

After the dough has risen, punch it down and divide into 8 equal pieces. Roll each piece into a rope about 1 inch thick and cut into 1-inch pieces.

Boil the Pretzel Bites

Carefully drop the pretzel bites into the boiling baking soda solution for about 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Bake

Brush the tops with melted butter and sprinkle with coarse sea salt. Bake for 12-15 minutes or until golden brown.
