Preparation
Prepare the Dipping Sauce
In a small bowl, mix together 1/2 cup of mayonnaise, 2 tablespoons of prepared horseradish, and 1 tablespoon of Cajun seasoning. Adjust seasoning to taste. Set aside.
Prepare the Pickles
Drain the sliced pickles and pat them dry with paper towels to remove excess moisture.
Set Up Dredging Station
In a shallow bowl, combine the flour, cornmeal, garlic powder, paprika, salt, and black pepper. In another bowl, pour the buttermilk.
Coat the Pickles
Dip each pickle slice into the buttermilk, allowing the excess to drip off, then dredge in the flour mixture until well coated.
Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Pickles
Carefully add the coated pickles to the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Serve
Serve the fried pickles hot with the Cajun horseradish dipping sauce.
