Preparation and Cooking
- 1
Prepare the Tartar Sauce
In a bowl, mix together mayonnaise, Old Bay seasoning, and lemon juice. Set aside.
- 2
Prepare the Potatoes
Peel and cut the potatoes into thick fries. Rinse them in cold water and pat dry.

Fry the Potatoes
Heat oil in a deep fryer or heavy pot to 350°F (175°C). Add the fries and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.
- 4
Prepare the Beer Batter
In a bowl, combine flour, cornstarch, baking powder, and salt. Gradually whisk in beer until the batter is smooth.
- 5
Fry the Fish
Dip each whitefish fillet into the batter and carefully lower into the hot oil. Fry for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.
- 6
Serve
Place the fried fish and fries in a basket. Serve with tartar sauce and a side of malt vinegar for drizzling.
