Cooking Instructions
Prepare the Noodles
Cook the wide rice noodles according to package instructions. Drain and set aside.
Stir-fry Vegetables
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant. Add broccoli florets and julienned carrots, stir-frying for about 3-4 minutes until tender-crisp.
Scramble the Eggs
Push the vegetables to one side of the skillet. Add the remaining tablespoon of oil and crack in the eggs. Scramble the eggs until fully cooked, then mix with the vegetables.
Combine Ingredients
Add the cooked noodles to the skillet. Pour in soy sauce, oyster sauce, sugar, white pepper, and salt. Toss everything together to combine and heat through for another 2-3 minutes.
Serve
Remove from heat and serve hot, garnished with additional white pepper if desired.
