Prepare Ingredients

Chop the white onion and carrot into small pieces. Beat the eggs in a bowl and set aside. Chop the green onion and set aside for garnish.

Stir-fry Vegetables

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chopped onions and carrots, and stir-fry for about 3-4 minutes until they are soft.

Add Eggs

Push the vegetables to one side of the skillet, and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them with the vegetables.

Combine Ingredients

Add the cooked rice, pineapple chunks, raisins, curry powder, soy sauce, salt, and pepper to the skillet. Mix everything together and stir-fry for another 5 minutes, ensuring the rice is heated through.

Garnish and Serve

Remove from heat, and garnish with chopped green onions and cashew nuts. Serve hot.
