Soak the Noodles
Soak the rice noodles in hot water for about 30 minutes or until soft. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together the fish sauce, soy sauce, brown sugar, and lime juice. Set aside.

Prepare the Protein
If using tofu, press to remove excess moisture and cut into cubes. Prepare the shrimp by peeling and deveining.

Cook the Tofu and Shrimp
In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5 minutes. Remove the tofu and set aside. In the same skillet, add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside with the tofu.

Stir-Fry the Vegetables
In the same skillet, add another tablespoon of oil if needed, then add the minced garlic and cook for about 30 seconds until fragrant. Add the soaked rice noodles and stir-fry for 2-3 minutes.

Combine Ingredients
Add the cooked shrimp, tofu, bean sprouts, and green onions to the skillet with the noodles. Pour the sauce over the top and toss everything together until well combined and heated through, about 3-4 minutes.
Serving

Garnish and Serve
Serve the Pad Thai hot, garnished with crushed peanuts, chopped cilantro, and lime wedges on the side.
