Method

Turkey

  1. 1

    Prepare the Turkey

Preheat your oven to 325°F (165°C). Rinse the turkey under cold water and pat it dry with paper towels.

  2. 2

    Season the Turkey

In a bowl, mix softened butter, salt, black pepper, garlic powder, onion powder, rosemary, thyme, and lemon juice. Rub this mixture all over the turkey, including under the skin.

  3. 3

    Roast the Turkey

Place the turkey on a rack in a roasting pan. Roast for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C). Baste occasionally with the pan drippings.

  4. 4

    Rest the Turkey

Once cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.

Stuffing

  1. 5

    Sauté Vegetables

In a large skillet, heat a bit of chicken broth over medium heat. Add chopped onion and celery and sauté until softened, about 5-7 minutes.

  2. 6

    Mix Stuffing Ingredients

In a large bowl, combine bread cubes, sautéed vegetables, sage, salt, and pepper. Stir in beaten eggs and enough chicken broth to moisten the mixture.

  3. 7

    Bake Stuffing

Transfer the stuffing mixture to a greased baking dish and bake at 350°F (175°C) for about 30-40 minutes or until golden brown on top.

Gravy

  1. 8

    Make Roux

In a saucepan, combine turkey drippings and flour, whisking over medium heat until smooth and bubbly.

  2. 9

    Add Broth

Gradually whisk in chicken broth, stirring constantly until the gravy thickens. Season with salt and pepper to taste.

Sides

  1. 10

    Prepare Green Beans

In a pot of boiling salted water, blanch green beans for about 3-4 minutes until bright green. Drain and set aside.

  2. 11

    Sauté Green Beans

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add green beans, season with salt and pepper, and sauté for another 5-7 minutes.

Dessert

  1. 12

    Prepare Filling

In a large bowl, combine pumpkin puree, sugar, beaten eggs, cinnamon, nutmeg, ginger, and evaporated milk. Mix until smooth.

  2. 13

    Fill Pie Crust

Pour the pumpkin filling into the pie crust and smooth the top.

  3. 14

    Bake Pie

Bake in a preheated oven at 425°F (220°C) for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 40-50 minutes, or until the filling is set.

  4. 15

    Cool and Serve

Allow the pie to cool before slicing. Serve with whipped cream if desired.
