Calamari Preparation

Soak the Calamari
In a bowl, combine the calamari rings and buttermilk. Allow to soak for at least 30 minutes in the refrigerator.

Prepare the Breading
In a shallow bowl, mix the all-purpose flour, cornmeal, salt, black pepper, garlic powder, and paprika.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Remove calamari from the buttermilk and dredge each ring in the flour mixture, shaking off any excess.

Fry the Calamari
Carefully place the breaded calamari rings into the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasoning
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and red pepper flakes. Bring to a simmer.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally.
