Method

Preparing the Fries

    Cut and Soak Potatoes

    Wash and cut the Russet potatoes into thin strips. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Drain and dry the soaked potatoes thoroughly. Fry the potatoes in batches for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with white truffle oil, sprinkle with grated Parmesan cheese and salt. Toss to combine.

Making the Dijon Aioli

    Combine Ingredients

    In a small bowl, mix together mayonnaise, Dijon mustard, minced garlic, and lemon juice. Stir well until fully combined.

    Adjust Seasoning

    Taste and add salt to your preference. Mix again and refrigerate until ready to serve.
