Making the Truffle Filling

Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl.

Heat the Cream

In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat.

Combine Ingredients

Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes. Add the butter and vanilla extract, then stir until smooth and fully combined.

Chill the Mixture

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm enough to scoop.

Forming the Truffles

Scoop and Shape

Using a melon baller or small spoon, scoop out the chilled chocolate mixture and quickly roll it into balls with your hands.

Coat the Truffles

Roll the truffles in cocoa powder or chopped nuts to coat them evenly.

Chill Again

Place the coated truffles on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to set.
