For the Steak and Ale Filling

    Brown the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and black pepper. Brown the beef on all sides, then remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onions, carrots, and minced garlic. Sauté for about 5-7 minutes until the onions are translucent.

    Add Mushrooms and Deglaze

    Add the sliced mushrooms to the pot and cook until they are softened. Pour in the ale and scrape the bottom of the pot to deglaze, then allow it to simmer for 2-3 minutes.

    Combine Ingredients

    Return the browned beef to the pot along with the beef stock, tomato paste, Worcestershire sauce, thyme, and bay leaves. Stir well to combine.

    Simmer

    Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 2-3 hours, or until the beef is tender. Stir occasionally and add more stock if necessary.

    Prepare the Pie

    Preheat your oven to 200°C (400°F). Once the beef filling is ready, remove the bay leaves. Pour the filling into a pie dish.

    Add the Pastry

    Cover the filling with the puff pastry sheets, trimming any excess. Make a few slits in the pastry to allow steam to escape. Brush the top with the beaten egg.

    Bake

    Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and flaky.

For the Mashed Potatoes

    Boil the Potatoes

    In a large pot, add the cubed potatoes and cover with cold water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes until fork-tender.

    Drain and Mash

    Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and black pepper to taste.
