Method
Cake Preparation
- 1
- 2
Melt Chocolate and Butter
In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- 3
Mix Eggs and Sugar
In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.
- 4
Combine Mixtures
Pour the melted chocolate mixture into the egg mixture. Add the vanilla extract and a pinch of salt. Stir until well combined.
- 5
Add Flour
Gently fold in the all-purpose flour until just combined. Be careful not to overmix.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the centers are still soft. Remove from the oven and let cool for 1 minute.
- 8
Serve
Carefully run a knife around the edges of each ramekin and invert onto a plate. Serve warm with a scoop of vanilla ice cream and garnish with chocolate shavings, if desired.
