Preheat the Oven

Preheat your oven to 200°C (390°F). Grease four ramekins with butter and dust with flour, tapping out the excess.

Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth.

Whisk Eggs and Sugar

In a separate bowl, whisk together the eggs, granulated sugar, and vanilla extract until the mixture is pale and frothy.

Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg mixture, stirring continuously to combine.

Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture, gently folding until just combined. Be careful not to overmix.

Baking

Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Bake

Bake in the preheated oven for 12-14 minutes, until the edges are set but the center remains soft and slightly jiggly.

Cool Slightly

Remove the ramekins from the oven and let them cool for 1-2 minutes. Carefully run a knife around the edges to loosen the fondants.

Invert and Serve

Invert each ramekin onto a plate, tapping gently to release the fondant. Dust with powdered sugar and serve immediately with fresh berries and a scoop of vanilla ice cream.
