Preparation
- 1
Prepare the Vegetables
Wash and chop the bell peppers, zucchini, carrots, and broccoli into bite-sized pieces. Halve the cherry tomatoes and set all vegetables aside.
- 2
Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
Cooking
- 3
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the chopped vegetables (bell peppers, zucchini, carrots, and broccoli) and cook for 5-7 minutes, stirring occasionally, until they are tender but still crisp.
- 4
Combine Pasta and Sauce
Add the cooked pasta to the skillet with the sautéed vegetables. Pour in the reserved pasta water, salt, and black pepper. Toss everything together gently until well mixed, allowing the pasta to absorb the flavors.
- 5
Finish with Cheese and Basil
Remove the skillet from heat, and stir in the grated Parmesan cheese and chopped basil. Toss again until the cheese is melted and everything is well coated.
Serving
- 6
Serve the Pasta Primavera
Serve immediately while hot. Garnish with additional Parmesan cheese and fresh basil if desired.
