Method

Preparation of Salmon

    Marinate the Salmon

    In a bowl, mix 2 tablespoons of olive oil, salt, and black pepper. Coat the salmon fillets with this mixture and let them marinate for at least 30 minutes.

    Preheat Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

Preparation of Vegetables

    Chop the Vegetables

    While the salmon is marinating, wash and cut the zucchini and bell pepper into bite-sized pieces. Trim the ends of the asparagus.

    Season the Vegetables

    In a large bowl, toss the chopped vegetables with 1 tablespoon of olive oil, salt, and black pepper.

Preparation of Potatoes

    Boil the Potatoes

    In a pot, add the new potatoes and cover them with water. Bring to a boil, then reduce to a simmer and cook for about 15-20 minutes or until tender.

    Prepare Garlic Butter

    While the potatoes are cooking, melt 2 tablespoons of butter in a small saucepan over low heat. Add minced garlic (from the whole cloves), and cook until fragrant. Stir in chopped fresh parsley.

Grilling

    Grill the Salmon

    Once the grill is hot, place the salmon fillets on the grill skin-side down. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    Grill the Vegetables

    Add the seasoned vegetables to the grill and cook alongside the salmon for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Serving

    Serve the Meal

    Once everything is cooked, drain the potatoes and toss them with the garlic butter. Serve the grilled salmon with the grilled vegetables and garlic butter new potatoes on the side.
