Fish Preparation

Prepare the Batter
In a mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until you achieve a smooth batter consistency.

Heat the Oil
In a deep frying pan or a fryer, heat vegetable oil to 350°F (175°C).

Batter the Cod
Dip each cod fillet into the batter, ensuring it's well-coated.

Fry the Cod
Carefully place the battered cod fillets into the hot oil. Fry each side for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into thick strips to form chips.

Fry the Chips
In the same oil used for the fish, fry the potato strips in batches until golden and crispy, about 5-7 minutes per batch. Season with salt to taste after draining on paper towels.

In a small bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill. Mix well until evenly combined.
