Prepare the vegetables
Wash all the vegetables thoroughly under running water. Chop the bok choy and cabbage into bite-sized pieces, and set aside.

Sauté the vegetables
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the cabbage and bok choy, and sauté for about 2-3 minutes until they start to soften.

Add remaining vegetables
Add the bean sprouts, spinach, enoki mushrooms, bamboo shoots, and corn to the skillet. Stir well to combine and cook for another 3-5 minutes until all the vegetables are tender but still crisp.

Season and serve
Season with salt and pepper to taste. You can also add soy sauce or sesame oil for extra flavor. Serve hot as a side dish or over rice.
