    Prepare the Broth

    In a large pot, combine chicken or pork broth and soy sauce. Bring to a simmer over medium heat and let it cook for about 15 minutes to allow the flavors to meld.

    Cook the Noodles

    In a separate pot, bring water to a boil. Add the curly noodles and cook according to package instructions, usually about 4-5 minutes. Drain and set aside.

    Prepare the Toppings

    Slice the chashu pork into thin pieces. Soft-boil the eggs by placing them in boiling water for 6-7 minutes, then transfer to cold water to stop cooking. Peel and cut them in half.

    Assemble the Bowl

    In each serving bowl, place a portion of noodles. Ladle the hot soy broth over the noodles. Top with chashu pork, soft-boiled egg halves, chopped scallions, and a sheet of nori.

    Garnish with additional scallions if desired and serve immediately.
