    Make the Pork Broth

    In a large pot, combine pork bones and water. Bring to a boil, then reduce heat and simmer for at least 12 hours, skimming off any impurities.

    Season the Broth

    After simmering, strain the broth and return it to the pot. Add soy sauce and mirin to taste. Keep warm.

    Prepare Chashu

    If not pre-made, roll and braise pork belly in soy sauce, mirin, and sugar until tender. Slice into thin pieces.

    Soft-Boil the Eggs

    Boil eggs for 6-7 minutes, then cool in ice water. Peel and marinate in a mixture of soy sauce and mirin for at least 30 minutes.

    Cook the Noodles

    In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

    Assemble the Ramen

    In serving bowls, place cooked noodles and ladle hot broth over them. Top with chashu, bamboo shoots, soft-boiled eggs, sliced scallions, nori, and a drizzle of sesame oil.
