Prepare the Pork Belly
In a large pot, combine the soy sauce, hoisin sauce, brown sugar, rice vinegar, ginger, and minced garlic. Add the pork belly and enough water to cover it. Bring to a boil, then reduce heat and simmer for 2 to 3 hours until the pork is tender.

Shred the Pork
Remove the pork belly from the pot and let it cool slightly. Once cool enough to handle, shred the pork into bite-sized pieces.

Prepare the Bao Buns
Steam the bao buns according to package instructions until fluffy and warm.

Assemble the Bao
Place a generous amount of shredded pork belly in the center of each steamed bao bun. Top with sliced cucumber, a drizzle of hoisin sauce, sesame seeds, and sliced green onions.
