Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallots. Sauté for about 2-3 minutes until fragrant and the shallots are translucent.

Cook the Shrimp
Add the shrimp to the skillet and season with salt and black pepper. Cook for about 3-4 minutes, or until the shrimp turn pink and opaque.

Pour in the Pernod and let it simmer for 1-2 minutes, allowing the alcohol to evaporate slightly.
