    Marinate the Chicken

    In a bowl, combine chicken pieces with salt, black pepper, turmeric, cumin seeds, garlic, ginger, and half of the chopped onions. Let marinate for at least 30 minutes.

    Sauté the Onions

    In a large pot, heat the vegetable oil over medium heat. Add the remaining chopped onions and sauté until golden brown.

    Cook the Chicken

    Add the marinated chicken to the pot and cook until browned on all sides. Add the cinnamon stick and enough water to cover the chicken. Bring to a boil, then reduce heat and simmer for about 30-40 minutes until the chicken is tender.

    Prepare the Rice

    While the chicken is cooking, rinse the basmati rice under cold water until the water runs clear. Soak in water for 30 minutes, then drain.

    Combine Rice and Chicken

    Once the chicken is cooked, remove it from the pot and set aside. Add the soaked rice to the pot with the remaining liquid. Stir well and place the chicken pieces on top of the rice.

    Bake the Dish

    Cover the pot with a tight-fitting lid and transfer it to a preheated oven at 180°C (350°F). Bake for 25-30 minutes or until the rice is fully cooked.

    Prepare the Topping

    In a small pan, lightly fry the julienned carrots in a bit of oil until tender. Add the raisins and cook for another 2-3 minutes.

    Once baked, fluff the rice with a fork, and serve topped with the carrot and raisin mixture.
