    Prepare the Baklava

    Preheat your oven to 350°F (175°C). In a bowl, combine the chopped pistachios with ground cinnamon. Set aside.

    Layer the Phyllo Dough

    Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out. Brush a 9x13 inch baking dish with melted butter. Place one sheet of phyllo dough in the dish, brush with butter, and repeat this process for about 8 sheets.

    Add the Pistachio Filling

    Spread a third of the pistachio mixture evenly over the layered phyllo. Layer 4 more sheets of phyllo, brushing each with butter. Repeat this process two more times, layering pistachios and phyllo, finishing with a top layer of at least 8 sheets of buttered phyllo.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes.

    Bake in the preheated oven for about 45-50 minutes, or until golden brown.

    Prepare the Syrup

    While the baklava is baking, combine the sugar, water, and honey in a pot. Bring to a boil, then reduce heat and simmer for about 10 minutes. Add vanilla extract and remove from heat.

    Soak the Baklava

    Once the baklava is done baking, immediately pour the hot syrup over it. Allow it to soak for at least 4 hours, preferably overnight, before serving.
