    Prepare the Broth

    In a large pot, combine the vegetable broth and miso paste. Heat over medium until the miso is fully dissolved and the broth is steaming, but not boiling. Keep warm on low heat.

    Cook the Noodles

    In a separate pot, bring water to a boil and cook the curly noodles according to package instructions. Drain and set aside.

    Soft Boil the Eggs

    In a small pot, bring water to a boil. Gently add the eggs and boil for 6-7 minutes for soft-boiled eggs. Remove and place in ice water for a few minutes before peeling.

    Assemble the Bowl

    In each serving bowl, place a portion of noodles. Ladle the warm miso broth over the noodles. Top with slices of chashu pork, sweet corn, bamboo shoots, halved soft-boiled eggs, sliced scallions, and a sheet of nori.

    Serve

    Garnish with additional scallions if desired and serve immediately while hot.
