    Prepare the Beans

    Soak the kidney beans overnight in water. Drain and rinse them before cooking.

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Add minced garlic and cook for an additional minute.

    Add Tomatoes and Spices

    Chop the tomatoes and add them to the pot along with salt, black pepper, and turmeric. Cook until the tomatoes break down and form a sauce, about 5-7 minutes.

    Combine Beans and Water

    Add the soaked kidney beans to the pot along with water and bay leaves. Bring to a boil.

    Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beans are tender.

    Once the beans are cooked, stir in the lemon juice and adjust seasoning to taste. Remove bay leaves before serving.
