    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized (about 30-40 minutes).

    Deglaze the Pot

    Pour in the dry white wine and scrape the bottom of the pot to remove any browned bits. Allow the wine to reduce for about 5 minutes.

    Add Broth and Seasonings

    Add the beef broth, thyme, bay leaf, salt, and black pepper to the pot. Bring to a simmer and let it cook for 20 minutes.

    Serve

    Remove the bay leaf and ladle the soup into bowls. Top with crusty bread and shredded cheese, then broil until the cheese is bubbly and golden.
