    Make the Dough

    In a large bowl, combine all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling

    Boil the potatoes until tender, then drain and mash them in a bowl. Add chopped green onions, cilantro, cumin powder, black pepper, and salt to taste. Mix until well combined.

    Assemble the Bolani

    Divide the dough into small balls (about the size of a golf ball). Roll each ball into a flat circle about 6 inches in diameter. Place a generous amount of the potato filling in the center, then fold the dough over to create a half-moon shape. Seal the edges by pressing firmly.

    Fry the Bolani

    Heat oil in a frying pan over medium heat. Once hot, carefully add the bolani, frying until golden brown and crispy on both sides (about 3-4 minutes each side). Remove and drain on paper towels.

    Serve hot with chutney of your choice.
