Prepare the Beef
Season the beef tenderloin with salt and black pepper. Cut it into 1-inch cubes.

Sauté the Beef
In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and sauté until browned on all sides, about 4-5 minutes. Remove the beef from the skillet and set aside.

Deglaze the Pan
Pour in the brandy and scrape up any browned bits from the bottom of the skillet. Allow it to simmer for 1-2 minutes.

Combine Ingredients
Return the beef to the skillet. Stir in the demi-glace and Dijon mustard. Cook for an additional 3-5 minutes until the sauce is heated through and slightly thickened.

Serve hot, garnished with additional chopped scallions if desired.
