Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

In a mixing bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined. Set aside.

Cook the Guanciale
In a large skillet, over medium heat, add the diced guanciale. Cook until crispy and the fat is rendered, about 5-7 minutes. Remove from heat and set aside, leaving the fat in the skillet.

Combine Spaghetti and Guanciale
Add the drained spaghetti to the skillet with guanciale and toss to coat in the rendered fat. Let it cool for about 1 minute off the heat.

Add the Sauce
Slowly pour the egg and cheese mixture over the spaghetti, tossing quickly to combine. The residual heat from the pasta will cook the eggs gently, creating a creamy sauce. If the sauce is too thick, add a little reserved pasta water to achieve desired consistency.
