1. Mix Wet Ingredients

In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, and salt until well combined.

2. Combine Dry Ingredients

In a separate bowl, sift together the flour to break up any lumps.

3. Combine Wet and Dry

Gradually add the flour to the egg mixture, whisking until the batter is smooth and free of lumps.

4. Heat the Pan

In a large skillet, melt 2 tablespoons of butter over medium heat until bubbling but not browned.

5. Add the Batter

Pour the prepared batter into the skillet, spreading it evenly. If using raisins, sprinkle them on top at this stage.

6. Cook the First Side

Cook for about 4-5 minutes until the bottom is golden brown and the top is starting to set.

7. Flip the Batter

Using a spatula, carefully flip the pancake over. You can cut it into quarters to make flipping easier.

8. Cook the Second Side

Add the remaining butter around the edges if needed and cook for another 4-5 minutes until golden brown.

9. Tear and Serve
