    Roast the Lamb Rack

    Preheat the oven to 400°F (200°C). Season the lamb rack with salt, pepper, and olive oil. Place on a roasting pan and roast for 20-25 minutes for medium-rare. Let it rest before carving.

    Prepare the Risotto

    In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add the mushrooms and sauté until soft. Stir in the Arborio rice and cook for 1-2 minutes. Add saffron to the chicken broth and gradually add to the rice, stirring continuously until absorbed. Repeat until the rice is al dente, about 18-20 minutes. Stir in the edamame and Parmesan cheese.

    Grill the Asparagus

    Toss asparagus in olive oil, salt, and pepper. Grill on a barbecue or grill pan for about 5-7 minutes until tender and slightly charred.

    Cook the Collards with Bacon

    In a skillet, cook chopped bacon until crispy. Remove bacon and add chopped collards to the bacon fat. Sauté until wilted and tender. Return bacon to the skillet and mix well.

    Prepare the Kabocha Squash Salad

    In a bowl, toss roasted kabocha squash cubes with olive oil, salt, and pepper. Optionally, add a squeeze of lemon juice.

    Make the Roasted Fennel Caper Jus

    In the same pan used for the lamb, add sliced fennel and capers. Deglaze with a splash of chicken broth and simmer for 5-10 minutes until fennel is tender.

    Slice the lamb rack and serve it on a plate alongside creamy saffron risotto, grilled asparagus, collards with bacon, kabocha squash salad, and drizzle with fennel caper jus.
