Ice Cream Base

Method

Ice Cream Preparation

  1. 1

    Make the Ice Cream Base

In a medium saucepan, combine heavy cream, whole milk, sugar, and vanilla extract. Heat over medium heat until the mixture is warm but not boiling. In a separate bowl, whisk the eggs, then slowly add a small amount of the warm cream mixture to temper the eggs. Gradually add the tempered egg mixture back to the saucepan, stirring constantly until the mixture thickens slightly.

  2. 2

    Chill the Mixture

Remove the saucepan from heat, strain the mixture into a bowl, and let it cool. Cover and refrigerate for at least 4 hours or overnight.

  3. 3

    Churn the Ice Cream

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a lidded container and freeze until firm.

Sorbet Preparation

  1. 4

    Make the Sorbet Base

Blend the fresh fruit in a blender until smooth. In a saucepan, combine sugar, water, and lemon juice. Heat over medium heat until sugar is dissolved. Mix the sugar syrup with the blended fruit until well combined.

  2. 5

    Chill the Mixture

Transfer the mixture to a container and refrigerate for at least 2 hours.

  3. 6

    Churn the Sorbet

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a lidded container and freeze until firm.
