Prepare the Cream Mixture
In a saucepan, combine heavy cream, split and scraped vanilla beans, and a pinch of salt. Heat over medium heat until just boiling, then remove from heat and let steep for 15 minutes.

Whisk Egg Yolks
In a mixing bowl, whisk together egg yolks and granulated sugar until pale and slightly thickened.

Combine Mixtures
Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent curdling.

Strain the Mixture
Strain the combined mixture through a fine mesh sieve into another bowl to remove any solids.

Chill
Remove from the oven, let cool to room temperature, then refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
When ready to serve, sprinkle a thin layer of brown sugar on top of each custard. Using a kitchen torch, caramelize the sugar until it forms a crispy crust.

Serve with fresh berries and almond lace cookies on the side.
