    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Toss fingerling potatoes with olive oil, fresh rosemary, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.

    Cook the Ribeye

    Season the Black Angus ribeye steaks generously with Cajun seasoning, salt, and black pepper. Heat a cast-iron skillet over medium-high heat and add olive oil. Sear the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

    Prepare the Escarole

    In the same skillet, add the chopped escarole and sauté for 3-4 minutes until wilted. Season with salt and pepper.

    Assemble the Dish

    On a plate, arrange the sautéed fingerling potatoes, ratatouille, and braised escarole. Place the ribeye on top and garnish with gem lettuce and gherkins. Top with a dollop of dried cherry poblano butter.
