    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced Spanish onions and cook, stirring frequently, for about 30-40 minutes, or until the onions are deeply caramelized and golden brown. Season with salt and pepper.

    Deglaze the Pot

    Stir in the dry white wine, scraping up any brown bits from the bottom of the pot. Allow the wine to reduce by half.

    Add Broth and Herbs

    Add the beef broth, thyme, and bay leaves to the pot. Bring the mixture to a simmer and let it cook for about 20-30 minutes to allow the flavors to meld. Adjust seasoning with salt and pepper to taste.

    Prepare the Croutons

    While the soup simmers, preheat the oven to 350°F (175°C). Toss the baguette slices with olive oil, garlic powder, and parsley. Place them on a baking sheet and toast in the oven for 10-15 minutes, or until golden brown.

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top each with a generous amount of grated Gruyere cheese, and place under the broiler until the cheese is bubbly and golden brown.
