Citrus & Herb Grilled Swordfish

Preparation

    Marinate the Swordfish

    In a bowl, combine olive oil, lemon juice, parsley, basil, minced garlic, salt, and black pepper. Add the swordfish steaks and marinate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat while the swordfish is marinating.

    Grill the Swordfish

    Remove the swordfish from the marinade and place it on the grill. Grill for about 4-5 minutes on each side or until the fish flakes easily with a fork.

    Prepare the Sauce

    In a saucepan, heat the caper saffron cream sauce until warmed through.

    Serve

    Plate the grilled swordfish and drizzle with the warm caper saffron cream sauce. Serve with creamy Irish cheddar & pancetta ham risotto, Tuscan kale, rutabaga puree, spaghetti squash, and beet salad topped with almonds.
