Prepare the Tostadas
In a skillet, toast the corn tortillas over medium heat until they are crispy and golden on both sides. Set aside.

Prepare the Black Beans
In a small pot, heat the black beans over medium heat until warmed through. Season with salt and pepper to taste.

Assemble the Tostadas
On each toasted tortilla, layer a spoonful of black beans, followed by diced pineapple, julienned jicama, shelled edamame, and halved grape tomatoes.

Sprinkle crumbled cotija cheese over the top, then drizzle with crema.

Sprinkle ancho chili powder over the tostadas and drizzle with tomato vinaigrette for added flavor.
