In a large pot, bring the 4 cups of water to a boil. Once boiling, remove from heat and add the tea bags and sugar. Stir until the sugar is dissolved. Let it steep for about 15 minutes.

In a clean glass jar, add the cooled tea mixture and the 1 cup of starter tea. Gently place the SCOBY on top.

Cover the jar with a cloth and secure it with a rubber band. Let it ferment at room temperature for 7 to 14 days, tasting periodically to determine your desired flavor.

Step 4: Ferment

Once fermentation is complete, you can add fresh fruits, herbs, or spices to the kombucha for added flavor. Use a fine mesh strainer to remove any solids if desired.

Step 5: Add Flavorings (Optional)

Transfer the flavored kombucha into bottles, leaving some space at the top. Seal the bottles and let them sit at room temperature for an additional 3 to 7 days to carbonate.

Step 6: Second Fermentation

Once carbonated, refrigerate the bottles to stop the fermentation process. Your kombucha is now ready to serve!
