Prepare the Caper Crème Fraîche
In a mixing bowl, combine sour cream, chopped capers, minced garlic, and chopped parsley. Mix well and set aside.

Blacken the Shrimp
Toss the shrimp with blackening seasoning until evenly coated. Heat olive oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they are cooked through and have a nice blackened crust. Remove from heat.

Prepare the Herb Fries
Preheat your oven to 425°F (220°C). Toss the cut potatoes with olive oil, salt, and black pepper. Spread them evenly on a baking sheet and bake for 25-30 minutes, or until golden and crispy. Optional: sprinkle with fresh herbs before serving.

Assemble the Po'Boy
Lightly toast the split top buns. On the bottom half of each bun, layer arugula, followed by the blackened shrimp, and a generous dollop of caper crème fraîche. Top with the other half of the bun.
