    Prepare the Fries

    Preheat the oven to 425°F (220°C). Cut the potatoes into thin strips, toss them with olive oil, fresh herbs, salt, and black pepper. Spread them out on a baking sheet and bake for 25-30 minutes or until golden and crispy, flipping halfway through.

    Cook the Burger

    While the fries are baking, shape the ground Angus beef into two patties, season with salt and pepper. Heat a skillet or grill over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness. Add a slice of sharp cheddar cheese on top of each patty during the last minute of cooking to melt.

    Toast the Buns

    In the last few minutes of cooking, toast the brioche buns on the skillet or grill until golden brown.

    Assemble the Burger

    Spread lemon aioli on the bottom half of the toasted brioche bun. Place the cheeseburger patty on top, then cover with the top half of the bun.

    Serve

    Serve the burgers hot with a side of herb fries.
