Method

Preparing the Forbidden Black Rice

  1. 1

    Cook the Rice

Rinse the forbidden black rice under cold water. In a saucepan, combine the rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 30-35 minutes or until water is absorbed and rice is tender.

Cooking the Ahi Tuna

  1. 2

    Sear the Tuna

Heat olive oil in a skillet over medium-high heat. Season the tuna steaks with salt, black pepper, and sesame seeds. Sear the tuna for about 1-2 minutes on each side for rare, then remove from the skillet and let rest.

Sautéing the Vegetables

  1. 3

    Sauté the Vegetables

In the same skillet, add olive oil and sauté garlic for 30 seconds. Add broccoli, bell pepper, and carrot. Season with salt and black pepper. Sauté for about 5-7 minutes until vegetables are tender but still crisp.

Making the Beurre Blanc Sauce

  1. 4

    Prepare the Beurre Blanc

In a saucepan, combine shallots and white wine over medium heat. Reduce until only a couple of tablespoons of liquid remain. Lower the heat, whisk in the butter gradually until emulsified, then stir in heavy cream. Season with salt and black pepper to taste.

Plating the Dish

  1. 5

    Serve

On a plate, serve a portion of forbidden black rice, topped with sautéed vegetables and the seared Ahi tuna. Drizzle with beurre blanc sauce and enjoy!
