Method

Beef Tenderloin Preparation

    Prepare the Beef

    Preheat the oven to 400°F (200°C). Season the beef tenderloin with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes per side.

    Roast the Beef

    Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the internal temperature reaches 135°F (medium-rare). Remove from oven and let rest for 10 minutes before slicing.

Roasted Garlic Mashed Potatoes Preparation

    Cook the Potatoes

    Peel and cut the Yukon Gold potatoes into chunks. Boil in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add roasted garlic, butter, heavy cream, salt, and pepper to the potatoes. Mash until smooth and creamy.

Sautéed Asparagus Preparation

    Sauté the Asparagus

    Heat olive oil in a skillet over medium heat. Add asparagus, salt, and pepper. Sauté for 5-7 minutes until tender-crisp. Stir in toasted almonds before serving.

Port Wine Demi Preparation

    Prepare the Demi Glace

    In a saucepan, combine port wine and beef stock. Bring to a boil and reduce heat to simmer until reduced by half. Stir in butter until melted and smooth.

Rosemary-Garlic Butter Preparation

    Make the Compound Butter

    In a bowl, mix softened butter with minced garlic and fresh rosemary. Blend until well combined. Refrigerate until firm.
