Cooking Instructions

  1. 1

Prepare the Red Chile Mashed Potatoes

Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add milk, sour cream, butter, salt, and pepper. Mash until smooth and creamy.

  2. 2

    Sauté the Mushrooms

In a skillet, melt 1 tablespoon of butter over medium heat. Add sliced mushrooms and sauté until golden brown, about 5-7 minutes. Season with salt and pepper.

  3. 3

    Grill the Broccolini

Toss the broccolini with olive oil, salt, and pepper. Grill over medium heat until slightly charred and tender, about 5-7 minutes.

  4. 4

    Cook the NY Strip Steak

Preheat an oak grill. Season the NY strip steaks with olive oil, salt, pepper, and red chile powder. Grill for 4-5 minutes on each side for medium-rare, or to your desired doneness. Let rest for a few minutes before serving.

  5. 5

    Make the Béarnaise Sauce

In a small saucepan, combine egg yolks, white wine vinegar, and minced shallots. Whisk over low heat until frothy. Gradually whisk in melted butter until the sauce is thick and creamy. Stir in chopped tarragon and season with salt.
