Prepare the Apples
Core and slice the fresh apples into thin wedges.

Mix Ingredients
In a large bowl, combine the apple wedges, bourbon, brown sugar, cinnamon, nutmeg, lemon juice, vanilla extract, and a pinch of salt. Toss until the apples are well coated.

Cook the Mixture
In a large skillet over medium heat, melt the butter. Add the apple mixture and cook for about 10-15 minutes, stirring occasionally, until the apples are tender and the sauce is bubbly.

Remove from heat and let cool slightly. Serve warm with a scoop of ice cream if desired.
