Prepare the Crust
In a medium bowl, mix the melted butter with the orange-sugar cookie crumbs until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake in a preheated oven at 350°F (175°C) for 10 minutes, then let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add the sour cream, key lime juice, and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated. Be careful not to overmix.

Combine and Swirl
Pour the cheesecake filling over the cooled crust. Using a spoon, drop dollops of extra key lime juice on top and swirl it gently with a knife for a marbled effect.

Bake the Cheesecake
Bake the cheesecake in the preheated oven at 325°F (160°C) for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.

Remove the cheesecake from the oven and chill in the refrigerator for at least 4 hours, preferably overnight.

To serve, top with fresh strawberries, a generous dollop of crème fraiche, and a scoop of strawberry sorbet.
