    Make the Croutons

    Preheat the oven to 375°F (190°C). Cut stale bread into cubes, toss with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and bake for 10-15 minutes until golden and crunchy.

    Grill the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    Wash and chop the romaine hearts into bite-sized pieces. In a large bowl, combine the romaine, croutons, and grated Grana Padano cheese.
