Directions

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Vegetables

In a large skillet, heat olive oil over medium heat. Add the sliced zucchini, bell peppers, and minced garlic. Sauté until the vegetables are tender, about 5-7 minutes.

  3. 3

    Add Green Chilies

Stir in the diced green chilies and cook for another 2-3 minutes, allowing the flavors to meld.

  4. 4

    Make the Alfredo Sauce

Lower the heat and add the heavy cream to the skillet. Stir well and let it simmer for 2-3 minutes. Then, gradually add the shaved Grana Padano cheese, stirring until melted and creamy. Season with salt and black pepper to taste.

  5. 5

    Combine Pasta and Spinach

Add the cooked pasta and baby spinach to the skillet. Toss everything together until the spinach is wilted and the pasta is well coated in the sauce.

  6. 6

    Serve

Plate the pasta and garnish with fresh basil and extra shaved Grana Padano if desired. Enjoy your Green Chile & Grilled Vegetable Pasta Alfredo!
