Crème Brulée Directions

    Prepare the Custard

    In a saucepan, combine heavy cream, granulated sugar, and the seeds from the vanilla bean. Heat over medium heat until hot but not boiling.

    Mix Egg Yolks

    In a bowl, whisk together the egg yolks. Gradually add the hot cream mixture to the yolks, whisking constantly to prevent curdling.

    Bake the Custards

    Pour the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins. Bake at 325°F (160°C) for about 40-45 minutes until set.

    Chill and Caramelize

    Remove ramekins from the water bath and let cool. Refrigerate for at least 2 hours. Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize.

    In a double boiler or microwave, melt the semisweet chocolate and unsalted butter together until smooth.

    Pour the batter into a greased 9-inch round cake pan. Bake at 375°F (190°C) for 25-30 minutes until set.

    Allow to cool completely before removing from the pan. Serve with a dusting of cocoa powder or powdered sugar.
