Prepare the Risotto
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in Arborio rice and cook for 2 minutes. Gradually add vegetable broth, stirring frequently until the rice is creamy and al dente. Mix in sundried tomatoes and season with salt and pepper.

Roast Cauliflower
Preheat the oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden and tender.

Plate the Dish
On each plate, serve a portion of the risotto, topped with confit cippolini onions and roasted cauliflower. Place the seared salmon on top and drizzle with citrus-thyme beurre blanc.
